Recipe for Mixed Rice Using a Rice Cooker
Ingredients
(Serves 4)
For the Rice:
- 2 cups of white jasmine rice (or any long-grain rice)
- 2 1/2 cups of water
For the Mix:
- 150g (5 oz) chicken breast or thigh (optional, can be replaced with shrimp or tofu)
- 1 small carrot, diced
- 1/2 cup sweet corn kernels (fresh, frozen, or canned)
- 1/2 cup green peas
- 1/4 cup diced onion (optional)
- 2 cloves of garlic, minced
- 1/2 cup mushrooms, sliced (shiitake or button mushrooms work well)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for extra flavor)
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Optional Garnish:
- Green onions, chopped
- Fried shallots
- Fresh cilantro
Instructions
Step 1: Prepare the Ingredients
- Wash the rice:
- Rinse the rice thoroughly in cold water 2–3 times until the water runs clear.
- Drain well and place the rice in the rice cooker bowl.
- Chop the ingredients:
- Dice the chicken (or tofu) into bite-sized pieces.
- Prepare the vegetables by dicing the carrot and mushrooms.
Step 2: Cook the Protein
- Heat a small pan over medium heat, and add 1 teaspoon of cooking oil.
- Sauté the minced garlic until fragrant.
- Add the chicken (or protein of your choice) and stir-fry until lightly cooked (around 3–5 minutes). Add a pinch of salt and pepper for seasoning. Set aside.
Step 3: Assemble in the Rice Cooker
- Add water to the washed rice in the rice cooker. Use the standard ratio (2 cups of rice = 2 1/2 cups of water).
- Place the carrots, sweet corn, green peas, mushrooms, and onions evenly over the rice.
- Add the pre-cooked chicken (or tofu/shrimp) on top of the vegetables.
Step 4: Seasoning
- In a small bowl, mix soy sauce, oyster sauce, sesame oil, sugar, salt, and pepper. Stir until dissolved.
- Pour this sauce mixture evenly over the ingredients in the rice cooker.
Step 5: Cook
- Turn on the rice cooker and let it cook as you normally would for plain rice.
- Once the rice cooker switches to the “Keep Warm” mode, let it sit for an additional 10–15 minutes to allow the flavors to meld.
Step 6: Mix and Serve
- Open the rice cooker and gently mix the rice, vegetables, and protein together using a rice paddle or spoon.
- Serve hot and garnish with chopped green onions, fried shallots, or fresh cilantro as desired.
Tips:
- You can customize the recipe with other vegetables like bell peppers, broccoli, or zucchini.
- For added flavor, sprinkle a little fish sauce or chili oil before serving.
- If you prefer a vegetarian version, omit the meat and oyster sauce.
